Method
- Heat the olive oil in a big pot and fry the diced onions until softened.
- Add 5 Cloves of crushed or finely chopped Garlic and the Red Chilli Pepper and fry for another 2-3 minutes.
- Add the washed Spinach and cover the pot with a lid and let it wilt for about 7-10 minutes.
- Once the Spinach has completely wilted, added the Paprika and Cumin and cook with the lid off on simmer for 5 minutes to let the acess water simmer off and the spices to cook through.
- In a large frying pan add a little Olive Oil and 1 tortilla, layer it with half the Cheddar Cheese and spoon the Garlic Spinach mixture covering the cheese. Then add the second layer of Cheddar Cheese covering the Garlc Soinach mixture and cover that with the other Tortilla.
- Cook, for a few minutes on each side, so that both sides of cheese has melted.
- Once cooked, cut into halves or quarters and serve immediately with Guacamole!
Notes
*If your Tortillas are particularly soft, you and you can't flip it to cook the other side for fear of it all falling apart! then use 2 frying pans and transfer to cook the other side.
*You can add sliced fish or a meat of your choice if you wish, as a variation.
