Mix all the ingredients up in a mixing bowl until you have a smooth batter.
Pour batter into your Muffin papers which should be in your Muffin baking tray.
Add a blob of Strawberry Jam on top of each Yeast Muffin Batter, When cooking the jam sinks to the centre.
Place in the oven at Gas Mark 4 for 25-30 mins, until cooked through and Golden Brown on top and leave to cool.
Mix melted butter and icing sugar together and form a round ball, cut into 6 pieces and roll into balls.
Flatten each Butter Frosting ball onto the top of each Yeast Muffin
Cut Strawberries into quarters and arrange in a star over the Butter Frosting
Dust with a little Icing Sugar and enjoy!
